This blueberry and granola yogurt parfait will hit the spot when you need that mid day treat. A simple recipe for those who enjoy meal prepping. Also, easy to adjust protein, carbs, and fats to meet your macro requirements.

Instructions

  • Place 2/3's of your yogurt in the bottom of a servings cup
  • Top the yogurt with half of your granola and half of your blueberries
  • Then add the remaining yogurt and the top with the remaining granola and blueberries
  • Garnish with fresh mint.

NOTES FOR MEAL PREP:

This is a wonderful recipe for meal prepping. You can store the individual servings in the fridge for 3 – 5 days. But you will want to keep the yogurt and blueberries separate from the granola, to prevent the granola from getting soggy. Follow the recipe until you reach “sprinkle with granola”.

Portion out the blueberry yogurt part of the recipe in containers with lids and and store those in the fridge for 3 – 5 days. Then place your granola in zip lock bags in your pantry, pre-portioned out. When it is time to enjoy, simply pour the granola over top of your yogurt and blueberries.

NOTES FOR COUNTING MACROS:

PROTEIN:

The protein in this recipe comes from the yogurt.

  • With every 1 ounce of yogurt you can increase the protein by 3 grams. With this blueberry granola recipe you can choose to have as little or as much yogurt as you would like.
CARBOHYDRATE:

The carbohydrate in this recipe comes mostly from the granola

  • For every 10 grams of honey almond flax you increase or decrease your carbs by 6.6 grams.
FAT:

There is not a ton of fat in this recipe but if you are looking to add more healthy fats into your diets you cold choose to switch out the type of yogurt you are using in this recipe:

For example: 

  • 2% fat greek yogurt has 2 grams of fat per every 4 ounces.
  • 5% fat greek yogurt has 5 grams of fat per every 4 ounces. 

This allows you to replace the non-fat greek yogurt with as little or as much fat as you want.

When making adjustments to the macros in this blueberry and granola yogurt parfait, you will want to keep in mind the number of servings you are making.
