Easy Turkey Zucchini Roll-Ups

A healthier spin on lasagna, and trust me you won’t be missing the pasta with this Easy Turkey Zucchini Roll-Ups.

Ingredients to make Easy Turkey Zucchini Roll-Ups:

Instructions:

  1. Start by heating a large stovetop pan to medium heat.
  2. Once the pan is hot add the oil to the pan. Then immediately add the ground turkey to the pan. Using a heavy spatula begin chopping up the turkey into smaller pieces.
  3. Once the turkey is mostly chopped up add the onion, bell peppers, and fresh garlic to the pan. Stir everything together continuing to break the ground turkey down into pea-sized pieces. Cook for about 10 minutes, stirring every minute or so to prevent burning.
  4. While the turkey is cooking preheat your oven to 375° and slice your zucchini into long thin strips/ribbons.
  5. After 10 minutes of cooking add the frozen corn, tomato sauce, black pepper, garlic powder, and red pepper flake to the pan. Stir everything together and continue cooking for another 2 minutes.
  6. Now it’s time to assemble the roll-ups in an 8×8″ baking dish. Start by laying 1 thin slice of zucchini, next to another until you have covered the bottom of the dish in one even layer. Depending on the size of your pan this will be 3-4 slices. Lay them covering the bottom of your pan from side to side. It is ok if the ends of the zucchini lay over the edges of the dish.
  7. Then spread some of the turkey mixture across the middle of all the zucchini slices in your dish. You will pile on enough to make a row about 1 inch high and 1 inch wide. Then grab one end of the zucchini and roll it over the mound of turkey and tuck it under the turkey to hold the end down. Do this with each of the zucchini slices you laid next to each other. Then push these rolls as close to the top edge of your pan as possible.
  8. Now do #6 & #7 again. Laying one layer of zucchini along the bottom of the pan, this time it is ok for one end to overlap the edge of the pan, and the other end of the zucchini to overlap the turkey roll. Pile on more turkey and roll again. Then push these rolls as close to the other rolls as possible. Continue until you have filled your pan with zucchini turkey roll-ups. You want them to be nice and tight.
  9. Now sprinkle all of your shredded cheese over top of the zucchini rolls. Then bake at 375° for 12 minutes.
  10. Once done remove from the oven and top with sliced avocado, jalapeno, and cherry tomatoes. Serve and Enjoy!

  • 1 Jalapeno sliced, (about 15 grams) optional
  • 6 Cherry Tomatoes sliced, (about 30 grams) optional
