Heat a large stovetop pan with a lid to medium heat.
Once the pan is hot add your oil, peppers, and onions to the pan. Cook for about 5 minutes stirring every minute or so.
After 5 minutes add your mushrooms to the pan. Stir everything together, then cover with a lid and cook for 5 more minutes. Stir halfway through and be sure to recover with the lid.
Now add your sliced sausage, can of tomatoes, and season everything with salt, peppers, garlic, and red pepper flake. Stir everything together, then cover with a lid and cook for the remaining 5 minutes. Stirring halfway through again.
Now it is time to serve! Sprinkle with a little additional red pepper flake and enjoy!
