Instructions
Heat a large stovetop pan to medium heat. Once the pan is hot add the oil to the pan, then immediately add the chicken sausage.
Using a heavy spatula break the sausage up into bite-sized pieces. Cook the sausage for about 8 minutes, stirring every few minutes.
Once the sausage is almost cooked add in the orzo, water, chicken base, and stewed tomatoes. Turn up the heat to medium-high, and bring the liquid to a boil.
Once boiling add the tomato paste, mushrooms, bell pepper, jalapeno, and all of the seasonings to the pan. Reduce the heat to medium and allow everything to simmer for 10 minutes. Stirring every few minutes, scraping the bottom of your pan to prevent burning.
Once the majority of the water has been absorbed by the orzo, add the shredded cheese, stir one last time, and serve!
