Start by shelling and chopping your pistachios and dates.
Then in a large bowl combine: date, pistachios, quick oats, chia seeds, and protein powder. Stir everything together until well combined.
Then add the almond butter, dried cranberries, syrup, and chocolate chips to the bowl. Mix these into the rest of the ingredients until well combined. Your mixture should be dry but a little sticky.
Now add the water, a little bit at a time. The water will allow the ingredients to come together. You don't want them too wet or too dry. Add about 1 tbsp of water at a time, stir together and keep adding until everything looks moist but not dripping in water.
Now place the bowl in the fridge for 10-20 minutes. This will make the ingredients easier to work with.
Once cooled scoop out enough of the mixture to form 1 inch balls. Squish/Roll the ingredients in your hands to create the balls. Do this until you have used up all of the ingredients. You should be able to create 16, 1 inch balls.
