Ingredients, in this Tomato and Cucumber Salad:

  • 2 cup Cherry Tomatoes, sliced (about 1 entire cucumber)
  • 2 cup English Cucumber, diced (about 1 pint)
  • ¼ cup Feta Cheese, crumbles 
  • 2 tbsp Fresh Chives, diced
  • ½ Fresh Lemon, juiced
  • 1 tsp Black Pepper
  • 1 tsp Garlic Powder
  • Dash Salt

Instructions:

  1. Prep your ingredients: slice the tomatoes, dice the cucumbers, and slice the chives.
  2. Add all ingredients to a large bowl and toss until everything is well incorporated, the lemon juice is distributed, and all ingredients are seasoned.
  3. Enjoy this dish all on its own or as a side to just about any protein…my favorite with this salad is lemon pepper salmon!
