These oat and date bars are great for a quick grab and go breakfast or a snack. You are going to love including these in your meal prep this week.
Oat and Date Bars
- Pre-Heat oven to 400’°. Line a 7×9 inch pan with parchment paper, leaving a little overhang as handles for later.
- In a small bowl combine chopped dates, orange zest, and water. Stir together then set aside while you work with the other ingredients.
- In a medium bowl combine brown sugar, granulated sugar, butter, quick oats, flour, nutmeg, cinnamon, baking soda, and salt. Stir until well combined and all ingredients are moist.
- Press half of the oat mixture into the bottom of your baking pan. Press firmly and ensure the entire bottom of the pan is covered.
- Next add your date mixture on top of the oat mixture. Spread the date mixture evenly.
- Top the dates with the remaining oat mixture by sprinkling over top to cover evenly. Then press firmly into the pan. You want to make sure the mixture is even, with no areas where the mixture is lose.
- Bake the bars for 25 minutes at 400’° until golden brown around the edges. Allow to cool completely in the pan, then cut into squares.

Notes for Meal Prep:
This is a wonderful recipe for meal prepping. You can store these bars at room temperature for 5-7 days. You can also store them in the fridge for up to 10 days and in the freezer for 1 month. In the fridge or freezer they will not be as soft as storing them at room temperature but they will still be delicious.
Notes for Counting Macros:
Typically I give tips on how you can adjust my recipes to meet your macro requirements, but with baking that can be a little tricky. As a result this recipe doesn’t allow for any adjustments or it will not come together in the end. But I do hope you work these Oat and Date Bars into your meal prep with your macros and give them a try!
