Tomato & Cucumber Salad
- 250 g Cherry Tomatoes, sliced (about 2 cups)
- 260 g English Cucumber, diced (about 2 cups)
- 2 tbsp Chives, sliced
- 35 g Feta Cheese, crumbles (1/2 cup)
- 1/2 Lemon, juiced
- 1 tsp Salt
- 1 tsp Black Pepper
- 1 tsp Garlic Powder
- Prep your ingredients: slice the tomatoes, dice the cucumbers, and slice the chives.
- Add all ingredients to a large bowl and toss until everything is well incorporated, the lemon juice is distributed, and all ingredients are seasoned.
- Enjoy this dish all on its own or as a side to just about any protein…my favorite with this salad is lemon pepper salmon!
